The Sous Chef is responsible for assisting the Executive Chef in managing overall kitchen operations, covering the breakfast buffet, all-day dining restaurant, and sky lounge. This role ensures consistent food quality, smooth daily operations, and adherence to hotel standards. Responsibilities: - Oversee daily kitchen operations for breakfast buffet, restaurant, and sky lounge - Ensure breakfast buffet is prepared and served on time with high quality and presentation standards - Coordinate food preparation and service across all outlets to meet operational needs - Supervise, guide, and train kitchen staff to maintain efficiency and discipline - Support menu planning, costing, and recipe standardization with the Executive Chef - Monitor food quality, portion control, and minimize food waste - Ensure strict compliance with food safety, hygiene, and HACCP standards - Assist in inventory control, ordering, and proper storage of food items - Maintain kitchen cleanliness, equipment care, and safety procedures - Step in for the Executive Chef when required and support other shifts as needed Qualifications: - Minimum 2 years of experience in a similar role (Sous Chef or Senior Chef de Partie) in a hotel - Previous experience in a 4-star hotel or comparable establishment is preferred - Strong knowledge of breakfast buffet operations, restaurant service, and lounge menus - Ability to manage multiple outlets and handle high-volume operations - Proven leadership and team management skills - Good understanding of food hygiene, safety regulations, and kitchen best practices - Flexible to work early mornings, weekends, and holidays - Strong communication skills and professional attitude - Culinary qualification or relevant certification is an advantage
